Coconut Vegan Matcha Latte
Looking for a creamy, plant-based, hot beverage with a gentle energy boost? This recipe hits all those spots -- and will even support you on your weight-loss journey.
- 1 ¼ tsp Skinny Bunny Matcha Powder
- 1 tbsp sweetener of your choice -- like maple syrup, honey, agave, etc.
- ¼ tsp ashwagandha
- ¼ tsp maca root powder
- 2 tbsp very hot water
- ¾ cup coconut milk
- ¾ cup nut milk -- either macadamia, cashew, or hazelnut
Whisk together matcha powder, sweetener, maca root, ashwagandha, and hot water until it’s smooth. You can also do this in a blender instead of with a whisk!
Once the matcha is completely dissolved, gently heat the milks to your desired temperature while constantly stirring. Try to whisk as vigorously as possible without burning yourself to create that frothy latte experience. This would also be a good excuse to break out your espresso frother if you have one!
When heated, pour the milks over the matcha concoction in your serving mug and stir to combine. Then you’re ready to enjoy it!
